Set in the rolling hills of Western Australia’s Ferguson Valley, this cool yet sunlit region is fast gaining recognition for producing Cabernet Sauvignon of remarkable depth and character. The gravelly loam soils, combined with afternoon breezes that slow ripening, deliver wines of structure, intensity, and refined elegance.
Deep crimson red with vibrant purple hues, this Cabernet opens with lifted aromas of cassis and cedar oak. The palate is elegant and layered with dark berries, savoury black olive, and bay leaf, framed by fine tannins that lead to a long, lingering finish.
Matured for eighteen months in French barriques (40% new), this wine pairs beautifully with slow-cooked beef cheek and mushroom ragu over pappardelle.
